Exotics Novello (White and Rosé)

The Exotics range consist of the world’s first ever interspecies hybrids, designed to be out of the ordinary. These strains were creates for the production of iconic red, white and rosé wines and offers the security of an inoculated fermentation, with the sensory impact and interesting and complex aroma profiles usually associated with spontaneous fermentations.

Exotics Novello is a hybrid between S. cerevisiae and S. cariocanus. S. cariocanus is the closest relative to S. cerevisiae and is naturally found on grapes.

For soft, full-bodied and aromatic red, white and rosé wines.
